Fluffy Cinnamon Rolls

Do you love cinnamon rolls, but you’re nervous to bake with yeast? I was too. But this fluffy cinnamon rolls recipe is perfect for yeast beginners because it’s very easy and requires one rise only.

This recipe makes 12 classic, delicious, fluffy, extra soft cinnamon rolls. They’re unbelievable good and you can make them a night before.

Although cinnamon rolls take some time to make, they really aren’t as hard as one might think. You actually spend most of the time waiting for the dough to rise.

INGREDIENTS

For the dough:

  • 450g flour
  • 50g sugar
  • 1 tsp salt
  • 1 tbsp active dry yeast
  • 120 ml warm milk
  • 50 ml water
  • 3 tbsp unsalted butter
  • 2 large eggs

For the filling:

  • 50g unsalted butter
  • 50g sugar
  • 1 tbsp ground cinnamon

†For the frosting:

  • 100g icing sugar
  • ½ tsp vanilla
  • 2-3 tsp strong coffee or milk
  • 150g cream cheese

STEPS

Make the dough for fluffy cinnamon rolls. You can do it manually or if you have a mixer with a dough hook it will do most of the work for you.

First dissolve 1 tsp sugar in ½ cup of warm water and stir in the yeast. Wait for 10 min until it gets bubbly. Put all dry ingredients in the bowl of a standing mixer. Add eggs, warm milk, yeast mixture and mix on low speed until very well combined. If needed add some more flour until the dough comes together and pulls away from the sides of the bowl. It’s time to gradually add very soft butter and beat on medium low speed for 5 minutes. The dough should be soft, elastic and sticky.

Put the dough into a greased bowl, cover with plastic wrap and refrigerate for two hours or overnight.

When you are ready to roll out the dough, prepare the filling (mix together sugar and cinnamon and melt some butter) and grease the pan.

Use a rolling pin to roll the dough into a rectangle. Spread the butter, then sugar mixture and roll up to form a log. Cut into 12 equal size rolls and place them into the prepared pan. The rolls should not touch each other.

Cover with a plastic wrap and let rise for about an hour or until they double in size.

Bake cinnamon rolls at 180°C for about 20 minutes. The rolls should be golden on top.

To make cream cheese frosting, mix all ingredients together, then drizzle over the rolls.
