Espresso Baileys Tiramisu

Do you like soft desserts? Then Tiramisu is your choice. It’s one of the softest desserts ever. They say, there are as many different Tiramisu recipes as there are Italian grandmothers 🙂 Some recipes are base on raw egg whites, some on whipping cream, some are based on marsala wine, some on rum, brandy or liquor. I found one easy tiramisu recipe, made some minor changes, added some Baileys liquor instead of rum (that’s because I love Baileys) and ended up with this gorgeous Espresso Baileys Tiramisu recipe that I want to share with you. I’m sure you’re gonna love it too.

Before starting this recipe, make sure you use the freshest products and also make sure all of them are at room temperature. That will help ingredients mix together very smoothly.

INGREDIENTS

  • 1 cup sugar
  • ½ cup (approx.6) egg yolks
  • 1 ¼ cup mascarpone cheese
  • 1 ¾ cup whipping cream
  • 1cup cold espresso coffee
  • ½ cup Baileys liquor
  • 1 tsp vanilla
  • Lady fingers
  • Cocoa for dusting

STEPS

Combine egg yolks and sugar in a saucepan over boiling water and cook for about 10 min, stirring constantly. Remove from the heat and allow to cool before mixing in mascarpone.

Add mascarpone and beat until combined.

In a separate bowl whip the cream and vanilla until stiff peaks form.

Gently fold the whipped cream in the mascarpone mixture.

After that, pour the liquor in the cold espresso.

Dip ladyfingers in the coffee-liquor mixture briefly. Do not soak them!

Arrange first layer of soaked ladyfingers in the base of a serving dish (it can be of any shape).

Then, spread half of tiramisu cream over biscuits.

Now, add your second layer of ladyfingers to the dish.

And add the rest of the cream, spreading it evenly.

Cover with plastic wrap and let it set for at least six hours, overnight is best.

Note: Grate some bittersweet chocolate over the first layer of tiramisu cream.

They say tiramisu can be kept in the fridge up to one week. I’ve never tried this, but I could observe the dessert is really better  after 1-2 days, as flavors get better together. So, it’s a great idea to make tiramisu ahead of time.
