Apple pie cupcakes… I could just skip my morning cup of coffee and have one of these instead! I absolutely love cupcakes and these are my favorites.

They’re just super delicious, something that truly taste like a bite of apple pie with cinnamon flavor and I’m sure you are going to love them too. And yes, they are really super easy to make. Perfect recipe for amateur bakers.

I made the batter using only a whisk to combine all the ingredients. The end result is super moist and fluffy cupcakes packed full of cinnamon and grated apples.

INGREDIENTS

  • 1 1/2 cups all purpose flour
  • 1/2 cup light brown sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1/4 cup plain yogurt
  • 1 cup grated apples (I used gala)
  • 1 tsp cinnamon
  • a pinch of salt
  • 1tsp vanilla extract

STEPS

Preheat oven to 175°C/ 350°F and line muffin pans with cupcake liners.

Combine dry ingredients: flour, sugar, baking powder, soda, salt and cinnamon.

Combine wet ingredients: eggs, vegetable oil, plain yogurt and vanilla and whisk together.

Gradually add dry ingredients to wet ingredients and whisk until combined.

Finally, fold grated apples into the mixture and fill cupcake liners 2/3 full with batter.

The apple pie cupcakes bake for about 15-20 minutes and then can be served however you like. Vanilla whipped cream, caramel sauce, ice cream… are all great ideas.

By the way, when you take cupcakes out of the oven, don’t rush to take them out of the muffin pan immediately. Let them cool a few minutes first.

Note:

Don’t overmix the batter! Mix only to combine all ingredients. Less mixing results in lighter muffins.

Don’t overfill your cupcake liners. Fill them only 3/4 way up.

Apple pie cupcakes can be kept in an airtight container on the kitchen counter for 2-3 days. They also freeze really well without any topping.
