Easiest Ever Chocolate Fudge Cake

Chocoholic? Me too. I love chocolate in all forms and shapes. And I love trying to bake delicious chocolate cakes. If you’re craving for a chocolaty treat, here’s the easiest ever chocolate fudge cake recipe. No kidding. It’s dark, rich and fudgy, yet light and fluffy.

INGREDIENTS

  • 150g self-raising flour
  • 30g cocoa powder
  • 1 tsp baking powder
  • 175g brown sugar
  • 175g butter
  • 3 eggs
  • vanilla
  • 50g dark chocolate

For the icing:

  • 200g butter
  • 200g icing sugar
  • 200 dark chocolate
  • pinch of salt

STEPS

Preheat oven to 175°C and grease two round baking pans.

Combine all the ingredients and beat until everything is well incorporated and smooth.

Divide the batter between the two pans and cook for about 25 minutes or until a toothpick comes out clean.

Cool the cakes completely before frosting.

Chocolate Frosting:

While the cakes cool, make the chocolate frosting.

Whisk together melted butter and icing sugar (if needed add a splash of milk to make it nice and smooth).

Add in the melted dark chocolate and beat until light and fluffy.

Frost the cake and decorate as you like.

You can frost the sides of the cake like I did or simply leave it bare like in the original recipe from Olive.

For the top I used some dark chocolate shavings. But you can also leave it bare.

Note: Buttery chocolate frosting has usually lots of sugar in it and that makes it too sweet. A pinch of salt added to the frosting actually makes a surprising difference. Unless you use salted butter, of course. Just a pinch of salt and it will balance the sweetness and will make the buttercream much tastier. I was not using this trick before, but I recently found it out and it’s great indeed. You can take out a spoonful of frosting before adding the salt and then taste the difference!
