Everyone loves cinnamon rolls. What about strawberry rolls with cheese frosting? It’s a tasty alternative and a summer version of cinnamon rolls. So quick, and easy, and tasty that you’ll want to make them again and again!
When strawberries are in season, you can make this recipe with fresh berries. But throughout the winter, you can enjoy the same great flavor using frozen strawberries or just strawberry jam.
INGREDIENTS
For the dough:
- 450g flour
- 50g sugar
- 1 tsp salt
- 1 tbsp active dry yeast
- 120 ml warm milk
- 50 ml water
- 3 tbsp unsalted butter
- 2 large eggs
For the filling:
- 200g chopped strawberries
- 75g granulated sugar
- 1 tbsp cornstarch
For the frosting:
- 100g icing sugar
- ½ tsp vanilla
- 2-3 tsp milk
- 150g cream cheese
STEPS
To make the dough, you need to:
Pour warm milk into the bowl of a stand mixer, stir in the sugar and yeast. Let sit until the yeast is foamy, about 10 minutes.
Add softened butter, salt and eggs beating on low speed. The butter won’t really be mixing into the mixture, but that’s normal.
Gradually add flour and beat on medium speed until a soft dough forms (about 10 min).
If you do not have a stand-mixer, knead the dough by hand for about 10 minutes.
Transfer the dough into a greased bowl and let it rise until double in size (1-2 hours).
Meanwhile, make the strawberry filling by combining fresh chopped strawberries and sugar in a saucepan over medium heat for 10 minutes, stirring frequently until you have a jam-like texture. Add the cornstarch and continue to stir for another 2 minutes. The mixture will thicken. Let it chill before use.
Roll out the dough into a rectangle and spread the strawberry mixture over the entire surface. I’ve added some raisins too, but that’s totally optional. Roll your dough into a spiral, cut into 12 even rolls and arrange them in a greased baking pan. Cover and allow to rise for about 1 hour.
Bake strawberry rolls for 25 minutes at 175C or until golden brown. Allow to cool as you make the frosting.
To make cheese frosting, just whisk all ingredients together and pour over warm rolls.
