RAFFAELLO Cake – A Perfect Christmas Cake

I love easy cake recipes that take not much effort but turn into something special. Raffaello cake is one of these! It’s a light almond and coconut cake based on white chocolate. It is both rich and creamy. And it’s just a must-have on your Christmas table!

INGREDIENTS

For the cake:

  • 6 large eggs
  • 120g caster sugar
  • 3 tbsp powdered sugar
  • 2 tbsp sunflower oil
  • 30g desiccated coconut
  • 100g plain flour
  • 1 tbs vanilla extract
  • 1 tsp baking powder
  • 1 tsp almond extract
  • a pinch of salt

For the filling:

  • 600g white chocolate chips
  • 600g heavy whipping cream
  • Coconut flakes for decorating

STEPS

Preheat oven to 180°C/350°F and grease two 8-inch cake pans.

Put the egg whites in a bowl and whisk slightly. Add 60g of caster sugar and beat thoroughly, then add the powdered sugar and continue to beat until well combined and stiff. Set aside.

Whisk the yolks with the other 60g of sugar, add vanilla extract and oil. Mix well.

Add the yolk mixture to the egg white mixture and mix carefully just to incorporate.

In a large bowl sift the flour, baking powder and add desiccated coconut.

Finally, add dry ingredients to our mixture and mix gently with a spatula to keep as much air in the batter as possible.

Transfer the batter into two baking pans and spread evenly.

Bake at 175°C for about 30min until a toothpick comes out clean. Allow cakes to cool completely.

After that, put them in the freezer for about 30-60 min. This will allow you to cut each cake into two even layers.

Frosting

Making white chocolate ganache for Raffaello cake is super easy. It involves heating cream and white chocolate together until the chocolate is melted and the mixture is smooth. As soon as mixture is cooled (better refrigerate for minimum 60min) beat at high speed until creamy and fluffy.

Before covering each cake layer with white ganache cream, drizzle some almond syrup over the top (200g water + 1tbsp sugar + 1tbsp almond extract). Using this little trick will result into a super moist and delicious cake.

After the cake is covered in the cream, spread the coconut and keep refrigerated until ready to serve.
